Toda Wataru no Okonomiyaki Santekan sits on the basement floor of Arc Hills South Tower in Roppongi, Tokyo. It opened here in 2014 as a restaurant run by Kiji, a long-established okonomiyaki house from Osaka.
The name comes from three Japanese words ending in te: kite (come), mite (see) and tabete (eat). Kan means to relax.
The 42-seat dining room has counter seats around the griddle and roomy tables. Lamps shaped after okonomiyaki spatulas hang from the ceiling.
The sound of the griddle, the aroma that rises from it and the airy texture of each bite: okonomiyaki is a dish for all five senses.

The batter is made with a dashi of bonito, kelp and chicken bones. That is where the airy texture and the savoury depth come from.
The most popular dish is suji-yaki, made with beef tendons simmered for eight hours. Its melting texture is joined by egg and green onion.
Two styles of modan-yaki are made with chewy noodles sent directly from Osaka. There is also a Western-style okonomiyaki: a potato batter with Iberico pork bacon and cheese.
At the counter around the griddle, you can watch the batter spread, the steam rise and the spatula go in, right in front of you.

Reservations are accepted for both lunch and dinner. Seating is limited to two hours per party.
